King Oyster (Pleurotus eryngii), or King Trumpet Mushroom, is an edible mushroom native to the Mediterranean, parts of Europe, the Middle East, North Africa, and China. It features a thick, meaty white stem and a small tan cap. Unlike many other mushrooms where stems are tough, the King Oyster’s stem is primarily used in recipes and makes up most of what you eat – though the cap is delicious too! Plus, they keep longer in the refrigerator than many other mushroom varieties, so you don’t have to rush to use them.
What are the health benefits?
King oysters are rich in vitamins, such as biotin, riboflavin, thiamine, niacin, Vitamin B6, and vitamin D. Mushrooms are one of the only natural foods that contain vitamin D, depending on where they are sourced. There is some evidence that they help to lower blood sugar levels as well as LDL cholesterol levels.

What do they taste like?
King Oyster mushrooms have a savory umami flavor with nutty, earthy undertones. Some taste a hint of a seafood flavor. We don’t think they have a lot of flavor on their own but can mesh into just about any recipe because of their ability to take on whatever flavors you are cooking with. They have a firm, meaty, chewy texture which makes them a popular choice for substituting them for meat in recipes. This versatility is why a King Oyster recipe is so appealing.

Ingredients
1 Pound King Oyster Mushrooms
1 Stick of Butter
1 Teaspoon of Thyme
1/2 Teaspoon minced garlic or powder
1 Teaspoon Old Bay Seafood Seasoning
Directions
- Slice the mushrooms into ¾ -1” thick slices.
- In a medium skillet, melt ½ stick of butter in the pan until it starts to foam, then cook about 2 minutes more until brown specks start to appear for a brown butter. Add ½ teaspoon of garlic to flavor the butter.
- Add mushrooms to the pan, spooning some of the butter over them. Add a teaspoon of thyme to the pan to flavor the mushrooms and the butter.
- Cook for about 3-5 minutes on each side until slightly brown.
- When they are done, transfer them to a dish and sprinkle with Old Bay and a sprinkle of thyme.
Notes
- You may be tempted to marinate the mushrooms, but exercise caution- Mushrooms are like a sponge and will absorb much more than you think. We did this the 1st time we made them and marinated in white wine. It sounded delicious, but they were horrible! Wine saturated mushrooms that would not sear and the taste was overpowered with wine.
