Ingredients
1# of shredded Lions Mane Mushrooms
2 Tablespoons Mayonnaise
2 eggs beaten
½ teaspoon Worcestershire Sauce
½ Tablespoon Yellow prepared mustard
2 teaspoons Old Bay (More if desired)
⅓ Cup Bread Crumbs, crushed crackers or Almond Flour–
2 Tablespoons Parsley
¼ Cup Chopped Onion and peppers (Optional)

Directions
- Clean Lions Mane if foraged, by using a soft brush to remove any debris. If purchased, inspect for any debris, DO NOT WASH! Using your hands, pull apart the Lions Mane teeth into pieces that resemble crab meat.
- In a separate bowl whisk together the eggs, mayonnaise, worcestershire sauce, mustard Old Bay and parsley.
- Slowly incorporate the wet mixture into the mushrooms, gently mixing with a spoon or your hands until well incorporated. Do not pour it all in, because you cannot take it out if it’s too wet. When it makes a nice consistency, add in breadcrumbs, crushed crackers, or almond flour and mix gently with a spoon until well mixed. If it’s too dry, add a little more mayonnaise, If it’s too wet, add a little more breadcrumbs/crackers/almond flour.
- In a medium skillet, heat oil or butter over medium heat.
- Form into patties or mounds and place into the hot pan. Cook thoroughly on each side for about 5 minutes until golden brown. Air Fryer Cooking: Place patties in air fryer on 415°F and air fry for about 15 minutes. **It is important to cook these mushrooms thoroughly. They can cause some gastric discomfort if not cooked completely.**
